Mark’s Chicken Vermouth & Mashed Turnips

Serves – 2/Prep Time – 5 min/Cook Time Turnips – 35 min/Cook Time Chicken – 10 min

This meal was so unbelievably delicious! Those mashed turnips were even better than regular mashed potatoes, and much better for you! Anyway, here goes:

MARK’S CHICKEN VERMOUTH & MASHED TURNIPS

 

Ingredients:

  • 8 oz chicken breast
  • ½ cup sweet vermouth
  • 1 tbsp butter
  • 1 small spanish onion
  • A pinch of herbes de provence
  • Black pepper & salt
  • 3 turnips
  • 2 tbsp butter
  • ¼ cup half&half creamer
  • 4 scallions (coarsely chopped)
  • salt & pepper to taste
  • 1 pinch herbes de provence
  • 1 tbsp honey (or to taste)

Instructions (Chicken):

  • Season chicken w/ salt & pepper
  • Put butter in pan, then add onions.
  • Lightly brown onions then add chicken
  • Add ½ cup sweet vermouth
  • Light pan until it goes out
  • Cover
  • Let sit 4 min

Instructions (Turnips):

  • Boil turnips for 25 min
  • Drain
  • Melt butter in the pan
  • Add scallions, salt, pepper and herbs
  • Smash turnips
  • Add to pan
  • Add cream
  • Smash (or whip) until smooth
  • Add salt, pepper, honey to taste
