Mark’s Sautéed Shrimp w/Peas & Pasta

Serves – 2 / Prep Time – 5min / Cook Time – 20 min

    • 6 oz shrimp
    • ½ cup onion (coarsely chopped)
    • 1 cup peas (Fresh or Frozen)
    • 4 oz spaghetti
    • 3 tbsp extra virgin olive oil
    • 1 tbsp of cracked coriander seeds
    • 1 tsp garlic powder
    • 1 tsp smoked paprika
    • 1 tsp sweet paprika
    • ½ tsp of mustard powder
    • ½ tsp cracked black pepper
    • Splash of Brandy
    • Salt to taste
    • Lemon juice to taste

Bring 3 quarts of water to a boil. Add salt and pasta to the boiling water.

Add oil to a medium-high heated skillet. After the oil is fragrant, add the garlic powder, smoked paprika, sweet paprika, mustard powder, cracked coriander seeds and onion. Salt now, if desired. Stir and cook for three minutes, or until onions are slightly brown and translucent. Add peas and shrimp to skillet with several splashes of brandy. Ignite alcohol fumes and cook for another two minutes.

Reserve 1/2 cup of boiling pasta water. Drain pasta. Add pasta to skillet with reserved pasta water, turn heat to high, cover and cook for 2 minutes. Uncover skillet and toss pasta to combine ingredients. Add lemon juice and more olive oil to taste. Serve.
