Mark’s Basic Tomato Sauce

Sauce serves 4-6 people / Prep Time – 5 Min / Cook Time – 30-45 Min


  • ½ cup onion (thinly sliced)
  • 4 garlic cloves (thinly sliced)
  • ½ tsp crushed dry marjoram
  • ½ tsp crushed fennel seeds
  • 3 tbsp olive oil
  • 1 box Pomi Chopped Tomatoes (28oz)
  • ½ tsp crushed dried oregano
  • ½ carrot (grated)
  • Salt & Pepper to taste


Add oil to a medium-low heated saucepan. Once oil becomes fragrant add onion, carrot, herbs and spices. Add salt & pepper as desired. Let sweat on medium-low heat for about 5-10 minutes, then add the garlic, then more salt. After cooking for 1 minute, turn up heat to high and add the chopped tomatoes and bring to a boil, then bring down to a simmer. Simmer for 30 minutes or until sauce is thick.

Spaghetti & Tomato Sauce (as in main picture): Drain cooked pasta but separate ½ cup of the pasta water. Add the pasta water and 1 cup of tomato sauce (per 4 oz of pasta) to a heated skillet, followed by the pasta. Cook for 1 minute on high heat or until thickened.
